Get Back on the Wagon!

Tonight I was talking with a new friend I’ve made here in Charleston. The conversation was pretty basic and revolved around the fact that “We’ve fallen off the wagon.” We both went through some trying times within the past several months, we’ve let our fitness and nutrition slip a bit; to the point that not only do we notice it, but others as well.  Today we decided on Sunday’s we’re going to meal prep together and hold each other accountable to get back to the “us” we know. It can be discouraging when you have fallen off the wagon, but it’s also reassuring when you meet someone who is also in the same boat, you’re not in this alone.  It is so much easier to meal prep and eat healthier when you have someone who has similar fitness goals! We’re all human, no one person is perfect and that’s the beauty of life. We have the opportunity to change and improve ourselves every day. This post is intended to revamp and re energize our fitness routine and hopefully it encourages you to do the same!  Here’s to getting back on track!

Today’s Workout was short and sweet:

20 Kettlebell swings
12 Dumbbell burpees
20 Lunges (per leg)
Repeat 3x

20 minutes stationary bike on level 6-8

Run 1.5 miles at your own pace

Post workout snack!
Home made pasta salad I made earlier today
PB&J on wheat bagel
Mixed Fruit smooth

Hawaiian BBQ Chicken and Quinoa


Prep Time: 5 minutes
Cook Time: 3-6 hours depending on setting
Serves: 2-4

Ingredients:
4-6 Frozen Boneless Chicken Breasts
1 Bottle of Sweet Baby Ray’s Original BBQ Sauce
1 20oz can of Pineapple Chunks, drained (or fresh)

Directions:
1. Place the frozen chicken breasts in the crock-pot,
2. Add entire bottle of BBQ sauce, covering the chicken,
3. Add drained can of Pineapple Chunks (or fresh) on top,
4. Cover and cook: 2-3 hours on HIGH or 4-6 hours on LOW.
5. Cook quinoa as directed on the box

Guess who's back?!?!?!

Alright, so I'm not Slim Shady, but I am super excited to be back on the blog again! A lot has changed since the last time I posted, but not my love for fitness and nutrition :)  So excited to be back on here sharing my workouts and recipes with you guys!!!

To start things back off, here's an AMAZING recipe for the delicious White Chicken Chili I made last night!  Enjoy :D

                                             Ingredients
  • 1lb chicken breasts
  • 2 cans great northern beans, drained and rinsed
  • 1 - 2 jalapenos, finely chopped
  • 1 box chicken broth 
  • 1 jar salsa verde
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper

                                             Directions


    Combine all ingredients into a 6-quart crock pot and stir to combine. Cover the crock pot and cook on high for 2.5 hours. Remove chicken and shred. Add the chicken back to the crock pot and cook on medium for 30 minutes!
