Protein Packed Veggie Mix

I made this dinner for roughly $10.00! I prepped the vegetables 2 days ago and then just dumped them into the pan tonight!  This was enough food for my boyfriend and I, and I still have enough left over for lunch or dinner tomorrow. It’s absolutely delicious for an incredible price. I hope you all enjoy it as much as I enjoyed making it!

Cook time: 30 minutes
Prep time: 5 minutes

Ingredients:
1 large chicken breast ( cut into chunks for marinading purposes) 
1 large broccoli crown ( chopped)
20 small carrots (copped)
5 stalks of celery(chopped)
1 yellow onion ( chopped)
1 Roma tomato
2 eggs
1 tablespoon of garlic powder
2 tablespoons of minced garlic (or if you prefer cloves, 2 cloves)
1 tablespoon of extra virgin olive oil
 2 tablespoons of soy sauce

Directions:
Cut chicken breast into large chunks and marinate in zip lock bag with soy sauce for 9 hours,
Grill chicken.
Heat olive oil and 2 tablespoons of garlic in large skillet on medium heat. Mix until garlic is light brown.
Add vegetables to skillet and cook on medium heat for about 10-12 minutes
Add in 2 tablespoons of soy sauce. Mix well.
When the vegetables are soft, push them to the side of the pan and crack in two eggs.
After the eggs have cooked, mix well with vegetables.
Cut chicken and add to skillet.

Serve hot, or store in Tupperware for later meal!  Enjoy!!
